- 2 lbs. lean ground turkey
- 1 cup Panko breadcrumbs
- ¼ cup finely chopped onion
- ¼ cup finely chopped zucchini
- ¼ cup finely chopped carrots
- 2 tablespoons Italian seasoning
- 2 large eggs
- 1 tablespoon coarse sea salt
- 2 tablespoons olive oil
- ¾ – 1 cup low sodium chicken broth
Jessica Alba’s Turkey Meatballs Recipe Steps
Prep all your ingredients before starting. You’ll want to finely chop the vegetables so you barely notice them in the meatballs. The easiest way to do this is to use a food processor and pulse a few times on the chop setting until your veggies are uniformly finely chopped.
In a large bowl, add the turkey, breadcrumbs, onions, zucchini, carrots, Italian seasoning, eggs and sea salt. Use your hands to mix all of the ingredients until well combined.
Next, make 1 inch balls by taking a little of the turkey mixture and gently rolling between your hands. I found that this recipe made around 31 meatballs, but this will vary depending on how large you make each one.
In a large skillet, heat the olive oil over medium heat. So you don’t overcrowd the skillet, cook the meatballs in batches. Place around 10 meatballs in the skillet and brown, turning often, for about 7 minutes.
Turn down the heat to low and pour in ¼ cup of chicken broth. Cover and cook the meatballs for an additional 7 minutes, until the liquid is almost completely absorbed.
Uncover and add a little more chicken broth, and cook until all of the liquid is absorbed. Then repeat these steps for the remaining uncooked meatballs. Serve with your choice of sides and enjoy!
